COBB SALAD WITH WARM BACON VINAIGRETTE
8 oz. Mixed Salad
Greens
3 oz. Cooked Diced Chicken
3 oz. Diced Tomatoes
1 1/2 oz. Blue Cheese
1 1/2 oz. Shredded Cheddar Cheese
1 Boiled Egg
Dressing
4 pieces of Bacon, cook and reserve oil
2 tsp. Dijon Mustard
3 oz. Champagne Vinegar
1/2 oz. Honey
1. Cook bacon and
reserve oil, put oil into a bowl and chop 1 piece finely and add to oil.
2. Slowly whisk in Dijon mustard until oil is thick.
3. Slowly whisk in vinegar and honey.
4. Season with salt and pepper to taste.
Putting it all
together.....
Place greens in serving bowl and top with chicken, tomatoes, cheeses, 3 chopped
bacon slices and sliced egg. Then top with dressing.
