35 oz. Pre-prepared peeled Cantaloupe
Juice of 4 Oranges
Juice of 2 Lemons
1 Quart Water
2 cups Madeira Wine
4 oz. Sugar
Peel of 1/4 Orange
Peel of 1/4 Lemon
1 oz. Cornstarch
3 tbsp. Chopped Mint (Garnish)
 

1.  Puree melon and  orange  juice in blender and chill.
2. Bring water,  Madeira wine, lemon juice,  orange and lemon peel to boil.
3. Thicken with cornstarch and chill.
4. Add melon, puree and season with sugar.
5. Add chopped mint on top of soup as garnish.
 

Serves 10
