16 Artichoke Hearts
16 Sea Scallops (medium)
4 oz. Extra Virgin Olive Oil
16 oz. Heavy Cream
12 oz. Garlic and Herb Cheese (pub cheese)
2 Lemons (juiced)
4 tsp. Fresh Basil (chopped)
Salt and Pepper to taste
1. Cut a small piece off bottoms of
artichoke hearts. This will allow easier handling and steadiness on pan.
2. With your thumb, gently push down centers of artichoke hearts and place on
scallop in each.
3. Drizzle with olive oil and bake in preheated 350 degree oven for 12 - 15
minutes.
Sauce
1. Heat cream and cheese in sauté pan, stirring constantly
2. Season with fresh chopped basil, lemon juice, salt and pepper.
3. Arrange artichoke hearts on plate and cover with sauce.
4. Garnish with colorful red peppers or fresh parsley.
