This is a wonderful complement with pork, salmon and even poultry.  Can be served either warm or chilled.

2 tbsp. Butter
1 small Green Pepper, diced small
1 small Red Pepper, diced small
1 small Red Onion, diced small
5 Granny Smith Apples
1 1/2 cups Raisins
2 oz. Cider Vinegar
1 tbsp. Fresh Mint

1.  Melt butter in sauté pan.
2. Sauté peppers and onions.
3. Add diced apples.  Sauté for five minutes.
4.  Add raisins and vinegar.
5. Season with salt and pepper and fresh mint.
