~~~~~ BANANA'S FOSTERS ~~~~~

2 Bananas (ripe but firm)
3 tbsp Butter
4 tbsp Packed Brown Sugar
1/8 tsp Nutmeg
1 tbsp Banana Liquor
1 oz. Dark Rum
Vanilla Ice Cream

1. Melt the butter in a heavy sauce pan and add the sugar.

2. Cook constantly stirring over a medium heat until caramelized
(3 to 4 minutes).

3. Peel and cut the bananas in half lengthwise, then in quarters.

4. Add the bananas to the caramelized sauce and sauté gently until bananas are soft.

5. Stir in nutmeg and banana liquor.

6. Remove pan from the stove.

7. Pour dark rum over the top and light with a match.

8. Cook until the alcohol burns out (approximately 1 minute).

9) Serve by spooning mixture over ice cream.
