1/2 cup Oil
1/2 lb. Sugar
1/2 tsp. Salt
1/1/2 oz. molasses
1 egg
3/4 lb. flour
1/2 tsp. nutmeg
1 1/2 tsp. Baking Soda
1/2 tsp. Ginger
3/4 tsp. Cinnamon
1/2 pint buttermilk
1 1/2 cups Blueberries
1. Beat together oil, sugar, salt,
molasses and eggs.
2. Combine all the dry ingredients in a separate bowl.
3. Sprinkle 2 tbsp. of dry mix over the blueberries
4. Add remaining flour mixture to oil mixture alternating with buttermilk.
5. Fold in blueberries.
6. Pour into 1 greased and floured 10" x 12" pan. Sprinkle the top with
sugar.
7. Bake in a 350 degree oven 30 - 40 minutes.
Test doneness by inserting toothpick in center.
If it comes out clean it is done.
