3 Eggs
1/2 cup sugar
2 cups Milk
1/2 cup light cream
1/2 tsp. Vanilla Extract
1/4 tsp. Nutmeg
1/2 tsp. Cinnamon
2 tbsp. Butter, melted
1/2 cup raisins
1 cup water
1 1/2 cups Converted Rice
vegetable oil as needed
1. Place eggs and sugar in mixing bowl, whisk to combine.
2. Add milk, cream, vanilla, nutmeg, cinnamon and butter. Mix well and
reserve.
3. Place raisins and water in saucepan, heat to boiling.
4. Remove from heat, let stand for 5 minutes, drain.
5. Add rice to reserved custard mixture, let stand for 15 minutes.
6. Coat 1 8"x8" pan or 2 10" x 12" pans with vegetable oil.
7. Pour in custard mixture. Place in hot water bath 1 inch deep.
8. Bake at 350 degrees for about 1 hour or until custard is set.
