CHICKEN AND MUSSEL PAELLA

1 lb. mussels
1 lb. chicken
oil
1 onion, chopped
2 garlic cloves, finely chopped
3 tomatoes, small dice
1 red pepper, small dice
1 green pepper, small dice
1/4 tsp. chili
1 tsp. paprika
pinch saffron
1 1/3 cup rice
4 cups vegetable stock
1 cup peas
1/4 cup dry sherry

1.  Clean mussels
2.  Heat oil in pan - add chicken and brown.
    Add onions, tomatoes, peppers.  Heat for 3 minutes. 
    Add garlic, saffron, chili, and paprika.
3.  Add rice and coat with oil.
4.  Add stock and simmer for 10 minutes.
5.  Add mussels, peas, and sherry.  Cook until rice is soft and mussels are open.
    Discard any that don't open.
