Cajun seasoning
1 Andouille sausage
2 - 6 oz. swordfish steaks
1/4 cup tomatoes, diced
1/4 c. roasted red peppers
3 oz. white wine
6 oz. chicken stock
2 oz. butter
1/2 basmati rice
1. Dredge swordfish in cajun spice.
2. Pan sear both sides.
3. Add tomato, red peppers, sausage.
4.Heat all ingredients. Add wine, chicken stock and butter.
5. Reduce until thick.
6. Serve over basmati rice.
