Jumbo Scallops
1/4 cup Tomatoes
2 Artichoke Hearts, quartered
1/2 cup Spinach
1/2 cup Basmati Rice
1. Cook basmati rice.
2. Pan sear scallops, sprinkle with dill and sear other side.
3. Add tomatoes and artichokes and toss.
4. When warm, add spinach until it wilts.
5. Place basmati rice in the bottom of the plate and place
scallop mixture around it.
