16 U-15 Shrimp, peeled and devained
4 oz. Extra Virgin Olive Oil
2 Large Tomatoes, seeded and diced
1 tbsp. Minced Garlic
1 tsp. Chopped Shallots
2 tbsp. Chopped Basil
4 oz. White Wine
8 oz. Tomato Sauce
4 oz. Feta Cheese
Salt and Pepper to Taste
1. In sauté pan, heat olive oil and sauté shrimp lightly on both sides.
2. Add the tomatoes, garlic, shallots, basil and white wine.
3. Cook 2 - 3 minutes. Add the
tomato sauce and feta cheese.
Let cook 3 - 4 minutes. Serve over rice or pasta.
