24 Jumbo Shrimp
4 oz Extra Virgin Olive Oil
5 oz Prosciutto (thinly sliced and diced)
2 Tomatoes (diced and seeded)
1/4 cup Fresh Basil (chopped)
4 oz Vodka
6 oz Heavy Cream
1 lb Penne Pasta
1/4 cup Parmesan Cheese
1/4 cup Scallions
1.In sauté pan add olive oil and shrimp...sauté on both sides,
(they will turn pink in color when cooked, do not over cook)
2. Add tomatoes, prosciutto and basil
3. Flame with vodka
4. Add cream and reduce liquid by 1/2 (3-5 minutes)
5. Add in pasta and cheese....toss
6. Place on serving platter, garnish with scallions.
